Why this isn't under martial arts, I won't know. This movie is incredible.

Why IP Man and not YIP Man? Quotes from the IMDb forum.
Ip/Yip is the same, and it is the surname of the main character. The difference in spelling just depends on who did the pronunciation spelling.
A great example is that my mum's maiden surname is spelled Chau, but for her brother, it is spelled Chow, simply because they had different people doing their birth certificates.
"Man" in this context does not mean male, it is in fact just the phonetic/pronunciation spelling of his first name (so basically, his first name in Chinese sounds like the word 'Man')
And because us Chinese puts our surname in the front, that is why his name is seen as Ip Man, not Man Ip.
The real reason the movie drops the "Y" is b/c that is how both his sons have romanized their last name. They were spelling their names (Ip Chun, Ip Ching) and their father's name (Ip Man) that way since before the idea of any Yip Man biopic was ever conceived. Since Ip Chun was involved in the film, they spelled it the way he spelled his father's name.
